NÚRIA V's TUNA PUDDING
- Easy peasy dish for emergencies!
TOTAL TIME: about 25 minutes
INGREDIENTS: canned tunafish, eggs (whole), bread (typical British loaf = pan de molde http://www.cocinandoconlaabuela.com/wp-content/uploads/2009/11/ingles_moldes_1200g.jpg), milk, tomato sauce (http://packagingspain.com/wp-content/orlando_tfao_baja1.jpg), salt. Optional: cocktail sauce (= salsa rosa http://1.bp.blogspot.com/_pIg9d66ylIU/TH686vGCpfI/AAAAAAAABVk/1CJX6O2zOlc/s1600/salsa+rosa.JPG) and olives
QUANTITIES: are approximate, I use these proportions for 4 people: 4-5 cans of tuna, 5-6 slices of bread, 4 eggs, just a little milk to make the bread softer, just a squeeze of tomato sauce to get a reddish colour, a pinch of salt, some sliced green olives (with no stone!).
PREPARATION: cut the bread roughly, mix all ingredients in a large bowl with a mixer (http://jabowiki.mendrulandia.es/images/8/81/Batidora.jpg) or blender (pour some of the oil from the tuna cans but not all of it). When you get a mousse-like mix and the bread is well mixed with the other ingredients, it's ready! Add the olives if you like them. Pour mix into a microwave-proof (silicone) or glass mould or container (mine's like this one but PINK! http://img.compradiccion.com/2010/02/molde-silicona-lekue.jpg). Cook in the microwave (medium heat) for about 15-20 minutes. You know it's ready when there's no soft mix at the bottom of the mould.
You can eat it cold or hot, cover it with cocktail sauce and it goes well with a nice salad!
