Ingredients: potatoes, eggs, onion (optional), olive oil and sal. The amount depends on how many people the omelette is for. Count 2 eggs and 1 medium-sized potato per person approximately.


You can also cook the sliced potato and chopped onion in the microwave (10 minutes, then stir, then extra 5-10 minutes depending on quantity), it saves a lot of time! Then when the potatoes and onion are soft you put them in a frying pan with hot oil and add the eggs, then you fry the mix slowly as the video shows and you flip the omelette so that it's well cooked on both sides.

Some harebrained people make Spanish omelette with crisps and they say it tastes OK, so, if you want to try...
