Easy-peasy coconut custard for 4

Cooking time: approx. 16 minutes

Ingredients: 500 cl. (or generous pint) of milk

100 gr. sugar

75 gr. extra sugar for the caramel or some of this (Caramelo Royal or similar): http://www.mishky.net/shop/images/template_mishky/8410000005387.jpg

5 eggs (whole)

1 spoonfool of corn flour/starch (Maizena - http://www.elcolmadito.com/Arte/MasProductos/DuryeaMaizena13_1.jpg)

1 lemon peel http://comps.fotosearch.com/comp/FDC/FDC001/lemon-peel_~921027.jpg

1 stick of cinammon http://blogimg.com/docisin/ceylon-cinnamon.jpg


Preparation:

Pour some milk into a bowl or mug and dilute the cornflour (Maizena), pour the rest into a larger bowl, add the sugar, the lemon peel and cinnamon stick. Heat up in the microwave for about 10-15 minutes (don't let it boil though). Take out the lemon peel and cinnamon stick, add the diluted cornflour, mix well and put into the microwave for another minute. Take out the mix, add the coconut and whisk. Pour caramel into the mould (or prepare by heating 75 gr sugar and a little water in the microwave) and pour the custard mix, heat in the microwave for 5-7 minutes.

Tip: I put the coconut in a bowl and pour some milk so that the coconut absorbs the liquid and doesn't "float" on the custar later  :)
